Veggie Heaven Stir Fry

In college, there was a vegetarian pho restaurant on campus called, Veggie Heaven. If you went to University of Texas – you know how good this place was! Sadly, they closed shop, as the owners retired. This dish is a tribute to their quirky atmosphere and wholesome veggie bowls that nourished my body after too many nights out in college – (because Tuesday was always $1 well drinks) yikes.

 

What you need:

¼ cup of coconut oil

1 yellow onion, chopped

4 large garlic cloves, chopped

1-inch piece of ginger, chopped

1 teaspoon of turmeric power

½ teaspoon of cumin

½ teaspoon of thyme

¼ teaspoon of salt

1 Large carrot, chopped

½ head of broccoli, chopped

½ head of cauliflower, chopped

1-2 cups of spinach (I like extra greens)

1 cup of green beans

1 tablespoon of sesame seeds

1 Lemon – halved for a kick of juice at the end

Optional grain base:

Quinoa, Brown Rice, Buckwheat Soba Noodles


Method:

In a large wok pan, sauté the onions, garlic and coconut oil until tender (2 mins)

Add in ginger and sauté for 1 minute. Then add turmeric, cumin, thyme and salt for 1 min

Add veggies to the pan and stir-fry until tender (10-15 minutes)

Serve and garnish with sesame seeds, pepper, salt and lemon juice to taste.
